The story
Villa Mosavali is a family winery, born from a shared passion and deep respect for Georgia's ancient winemaking culture. The family's vision went beyond simply producing wine — they wanted to create a place where guests could experience it fully: in a refined setting, paired with exceptional food, surrounded by the landscapes that shaped it.
That vision gave rise to a full estate: a winery, a hotel, restaurants, a wellness centre and one of the more remarkable underground wine cellars in the country. Every element of Villa Mosavali was built to bring the story of Georgian wine to life for the people who visit — and for those who receive a bottle wherever they are in the world.
Vineyard & terroir
Villa Mosavali’s 40-hectare vineyards stretch across Kakheti, Kartli, and Imereti — three of Georgia’s most renowned wine regions, each defined by its own distinctive soils, climate, and winemaking traditions. This multi-regional approach allows the estate to cultivate a diverse range of indigenous grape varieties, carefully selected for their character, balance, and expression of terroir.
Every step in the vineyards is carried out by hand, and after harvesting the grapes are gently transported in small crates to preserve their quality and integrity.
Winemaking style
Villa Mosavali combines three distinct winemaking approaches, giving its collection remarkable diversity and depth. Modern European stainless steel tanks provide precision and control during fermentation, while the traditional Georgian qvevri method preserves the authenticity of the country’s ancient winemaking heritage. Selected wines and spirits are also matured in French oak barrels, adding structure, complexity, and character.
Located four metres underground, the wine cellar naturally maintains ideal temperature and humidity levels for ageing. Within the cellar, oak barrels hold a collection of distinctive wines that gradually develop greater depth and aromatic complexity over time. Every element of the space is handcrafted using historic Georgian brick and oak, reflecting the estate’s commitment to tradition and craftsmanship.
Beyond wine production, Villa Mosavali also distils chacha and fruit brandies. Their chacha is produced from grape pomace fermented in qvevri and distilled in traditional copper apparatus. The fruit brandies are crafted using fruit distillates and water sourced directly from the winery’s well, before undergoing ice filtration to preserve purity and vibrant flavour.
